Large yellow flowers with dark purple centers bloom from August to October; can reach 7 feet tall. Fairly common to the Tallgrass Region, shows up sporadically farther east.

Edible Uses: Tubers - raw or cooked. Used like Jerusalem artichokes, to which they are not much inferior in taste though yields are lower.
